Quick and Easy Snacks for Support Workers: Sugar Free Banana Bread
As a busy Support Worker, we know your time is very precious. It can be difficult to find the time to prepare and plan nutritious meals to help you get through your busy day. But managing your own health and dietary needs is crucial if you are to deliver a high level of care and service to participants and customers.
Finding the time to prepare tasty and health snacks can seem daunting, but a little bit of preparation goes a long way! We’ve found a super simple recipe that anyone can whip up in just 15 minutes. It’s easily transportable and will keep well in foil or Tupperware. If you are working or travelling in hot weather, you may like to bring a small cooler bag to keep your snacks fresh.

Prep time: 15 minutes
Cook time: 1 hour and 10 minutes
Ingredients
4 very ripe bananas
2 eggs
1/2 cup olive oil
1/4 cup milk
1 tsp Ground Cinnamon
2 cups wholemeal flour
1 tsp baking powder
1 tsp Bicarbonate Soda
Pinch salt
Optional: handful of roughly chopped walnuts
Step 1
Preheat the oven to 160C or 140C fan-force. Grease and line an 11.5cm x 22cm (base measurements) loaf pan with baking paper.
Step 2
Mash bananas in a large bowl with a fork until smooth. Add eggs, oil and milk and stir until combined. Sift flours, cinnamon, baking powder, bicarbonate and salt over banana mixture (tip in the flour kernels). If you’re using walnuts, add those now as well. Stir until combined.
Step 3
Spoon into prepared pan and level top with a spatula. Bake for 1 hour 10 minutes or until a skewer inserted in centre comes out clean. Stand in pan for 5 minutes. Transfer to a wire rack to cool.
